Pizza & Wine Pairing: AVPN & AIS Campania together in the art of pairing

The project was presented in the beautiful Solfagnano Castle, in Umbria.

A collaboration that provides to pizzerias and pizza makers a tool to create the right pizza-wine combinations.

The appointments that characterize the 2024 of AVPN continue, association that this year celebrates 40 years of history. After the great success of the Vera Pizza Day, with thousands of enthusiasts following the 24-hour marathon that saw the association protagonist of masterclasses in every continent, it was the turn of a particularly important event for the world of pizzerias: the presentation of the manual that, AVPN in collaboration with AIS Campania, dedicates to the pairing of Pizza and Wine.

“The constant evolution of pizzerias also passes through a fundamental element like the pairing- Antonio Pace explains, President of the Associazione Verace Pizza Napoletana – The future pizzerias will have to look always more like a specialized Restaurant and will have to offer a wine list able to satisfy an increasingly demanding clientele. That is why we decided to provide to our affiliates, and not only, a tool that allows them to master this matter that requires instinct but also technical knowledge. This appointment in Umbria was the premise of the work that will be presented in Naples, in the month of July, during the days of celebration for the forty years of the Association.”

A premise that took place in the Solfagnano Castle, one of the most beautiful and suggestive residences in Umbria where the charm of the ancient meets the excellent wine production. It is no coincidence that Solfagnano Castle, with its production, registers its name as first of the list of the Italian wineries that will take part in the project. Here the board of the Association with some of its master pizza makers was confronted with Tommaso Luongo, President of Ais Campania, and with a group of selected journalists of the industry for a panel on what it means to define a methodology for the pairing of Pizza and Wine adoptable worldwide.

At the center of the table a proposal of wine labels by Solfagnano Castle and others selected by AIS Campania, looking for the right paring with the most popular pizza types. From the classic pizzas to the fried one, moving through sweet pizzas and pizzas with products from the garden, the sea, the woods, but also products from the cheesemakers, the butchers and the chefs, for a tasting experience that starts from the local territory but looks abroad, with the goal of improving the quality of pairing in pizzerias.

“This project- Tommaso Luongo says, President of AIS Campania – starts from the desire to tell every pizza maker from AVPN the methods of pairing so that they can adopt and adapt the flavors of their product to the wine. In this occasion we started with a proposal of territorial wines, from Umbria and Campania, to track the first guidelines and to prove how the pizza, even excluding traditional tastes, can create a bond with a specific wine following the rules of pairing. In fact, the manual stands as a professional tool to support all the pizza makers of the Association when choosing a coherent wine pairing and that can offer the most enjoyable experience to the customer.”
